AKA: Mu Ping

About: Mu Ping is a common street food in Bangkok consisting of grilled marinaded pork. This is a great party food and can also be made indoors if you have a cast iron grill pan. Soak the skewers in water prior to grilling so they don’t burn. When grilling, brush the pork with the coconut milk to keep the pork tender, but don’t soak the pork. Many recipes have a dipping sauce that accompanies Moo Ping (e.g. Jaew), but the sauce tends to be overpowering.

Note!: The soy, oyster, and fish sauces are salty and will dry out the pork if marinaded overnight.

Note!: Be careful what fish sauce you use!! Some grocery stores will carry the brand Squid, don’t buy it! It’s salt level is high and it tastes terrible. Check out these ratings of fish sauce to find a better one. Red boat 40 is incredibly better.

Additions:

  • Coriander, ground — 1 tbsp added to the marinade

  •  Palm sugar — Brown sugar, 1/2 cup
