Chicken Tikka Masala – LADL Flowchart Recipe

About:  Believe it or not, this is the national dish of Britain. This dish exists only because of a fusion of South Asian and British cuisine. Colonization and migration of South Asian foods such as tandoori chicken lead to the British addition of gravy (masala) to the dish. This is by far the most popular dish in the country and supermarkets claim to sell more than 18 tonnes a week.

Different restaurants cook masala different ways according to their South Asian influence. However, it is commonly agreed the dish includes chicken, yogurt, spices and tomatoes.

When cooking make sure not to char the chicken on the grill, it overpowers the flavor. But by grilling, the chicken takes on classic baked tandoori flavors.The yogurt and cream help to hide the tomato puree taste, add enough dairy until the tomatoes are almost indistinguishable. Remember, to salt and pepper to taste before eating.

Served with:

  • Basmati Rice
  • Naan

Additions:

  • Crushed red pepper flakes, 2 tsp, add with cilantro
  • Lemon juice in the marinade

Substitutions:

  • Yogurt — greek yogurt, honey flavor (I actually prefer this substitution)
  • Heavy cream — coconut milk, this is more fragrant
  • Tomato puree — fresh tomatoes
